For the record, cookies as breakfast is not my idea. It is from Bon Appetit.
I was very skeptical in the beginning but the ingredients were even healthier than my wacky cereal I created.
It includes the ever-in quinoa, oats, whole wheat flour, almonds, honey, raisins - but it tastes like a decadent cookie.
Well I loved it so much that I am sharing the Bon Appetit recipe. A batch can be your breakfast for the whole month.
Cream 1/2 cup butter with 1/4 cup sugar, 1/4 cup brown sugar, 1/2 cup honey.
Add 2 eggs and 1 tsp vanilla and cream for 2 minutes.
Now gradually add the flour base - 1.5 cups whole wheat flour, 1tsp salt, 1/2 tsp baking powder and 1/2 tsp baking soda.
Once all is mixed, add the good stuff:
- 1 cup cooked quinoa, cooled
- 1 cup old fashioned oats
- 1 cup dried cranberries or raisins (or a mix)
- 1/2 cup slivered unsalted almonds
Mix in and there's your cookie dough.
Line up cookie sheets with parchment paper, drop the dough in 2 large Tbsp drops and bake for 15 minutes in a pre-heated 375 oven.
They come out excellent, healthy, tasty and freeze well. Bonus that if you don't like them, neighbourhood cats will be all over them.
