KashiQuicheKashiQuicheKashiQuicheKashiQuiche

I picked this recipe off the Kashi Facebook Page. A healthier version of the best  Know-it-All Quiche ever by Replacement Chef.

I am sure Kashi does not mind me sharing the recipe, so enjoy it.

Crust
0.5 cup finely crushed Kashi TLC Original Crackers 
0.25 cup parmasen cheese
1 egg white

Mix and spread on a lightly oiled pie plate. I doubled the recipe to fit the plate, but it turned out too thick.

  
Sauté 1 cup chopped vegetables (I used red peppers and zucchini) with 2 tsp fresh chopped garlic using 0.5 cup fresh salsa instead of oil (yes, it works). Set aside.

In a bowl, mix, in this order:
- 1 egg and 3 egg whites
- 0.25 cup skim milk
- the vegetables
- 2 Tbsp chopped green chili
- 1 tsp cumin or chili powder

Fold into the mix:
- 0.5 cup ricotta cheese
- 0.5 cup shredded Jack cheese

Sprinkle with 0.25 cup parmesan and bake in 350 degrees oven for 40 minutes or until set.

Let stand for 15 minutes.


Served topped with a mixture of crushed tomatoes, cilantro and black olives.

Easy, healthy, sophisticated looking and perfect for the upcoming fall evenings.
