On Sunday I posted Four Sunday Eaters dinner menu including a French Yogurt Cake for dessert. Many have asked for the recipe, so thought I may as well post it for all to try and enjoy (it is simple and delicious).
Whisk 1.5 cups flour and 2 tsp baking powder in a bowl, set aside.
In another bowl, mix 1 cup sugar with 1 Tbsp grated lemon zest.
Add 0.75 cup whole-milk Greek yogurt, 0.5 cup vegetable oil, 2 eggs and 0.5 tsp vanilla.
Whisk to blend then fold in dry ingredients.
Pour into an 8 X 4 loaf pan, oiled and floured (I use parchment paper instead)
Bake in 350 oven for 55 minutes. Let cool for 15 minutes.
Enjoyed at somerville kitchen with freshly made vanilla whipped cream and strawberries.
