Camp Potatoes


I sure am getting tired of camping. Tonight was steaks on the electric grill. But the camp has exhausted all potato options - the idea of another frozen french fries, roasted potatoes or baked potatoes was making me yawn. While I am craving mashed potatoes, the mess they create is too difficult to clean in my little camp sink.



Mom's potatoes came to mind. These are the potatoes that you make when you don't know if you feel like fried, roasted, mashed or boiled potatoes. Specifically, you use the smallest new potatoes you can find; boil them, without pealing, for only 10 minutes; dry them then deep fry them until the peal turns dark brown and crumbly. Half as bad for you compared to french fries (given less frying time), crunchier than roasted ones, and more interesting than boiled or baked potatoes. Give it a try!
