Look how beautiful those roots are (not to mention the wrapping).
The first step was peeling the roots - it was not very difficult - just like any radish or turnip.
But the grating was where the fun begins. The smell, while bringing tears to my eyes, was so appetizing and fresh - exactly how a good jar of horseradish will smell when you first open it, but so fresh.
And that is all it takes - put the grated horseradish in a jar, make a little hole in the middle, pour in boiled rice vinegar, cover and store in the fridge for a couple of weeks.
What a beautiful gift; I can't wait to try it. What is most amazing about this gift is that the jar was the exact size to fit all the horseradish roots and the whole bottle of vinegar that came as part of the gift. These guys have the art of making horseradish down to a science.
