I started with every green piece of vegetable in the fridge - broccoli, green peppers, leek and green onions.
First, chop the leaks, green pepper and onions.
Fry them in a bit of olive oil, add 3 cups of vegetable broth and bring to boil. Add the broccoli pieces, cover and simmer for close to an hour.
And that's it - blend it to liquid and serve. Really easy, good and healthy.
Now how to serve it is not as easy or healthy (but really good). Option 1 - with sour cream and dill.
Or, option 2, with garlic bread croutons!
