Salmon in Cedar Papers

A neat cooking gadget of sorts I picked up at Market Meats (see September 13 entry - Just Dinner) - Cedar papers to cook all sorts of meats and vegetables in.The natural choice seemed to be salmon steaks (freshly fished this summer by one of my neighbours).


You simply soak the cedar paper for 10 minutes (you can add all sorts of spices or alcohol to when soaking to enhance the taste), wrap them around the salmon with the in-package supplied strings, and grill. Given the temperature outside, I baked the salmon wrapped in the cedar papers instead of grilling with excellent results. Served with stove grilled Brussels sprouts, steamed vegetables and mashed potatoes with lemon-butter and jardin herbs sauce.
