Yes, what is the lettuce doing in the frying pan? Well, as all of you Vancouverites are probably complaining about the rain we are having, my jardin is loving it. Just look at this abundance of lettuce. I have been having a salad or two every day and giving it away to friends and neighbours, and those lettuce plants keep on giving.
So tonight I just shaved them all and chopped them into small pieces. I fried some onions and garlic in olive oil, then added the chopped lettuce and fried them until wilted. Sprinkled with salt and pepper, a squeeze of lemon juice, and enjoyed.
Disgusted? Don't be, it is delicious. Cynical? Try it, easy, quick and healthy. Don't have lettuce? Drop by le jardin!
