Mini

Cats squeezing himself into a tiny box inspired me tonight to make a tiny deep dish chicken pie. See original recipe at Deep Dish Chicken Pie.

The more I thought about the idea, the more fun dinner making became. I decided it to call my chicken pie Mini.

Everything I needed was there. There were nice chunks of cooked chicken left from yesterday's roast chicken (read I Love Sundays).

There were three mini potatoes and four skinny carrots.

I made half the recipe for the dough. It was so easy to roll at this size.

Half a cup of white sauce was made, all put in a mini baking dish and covered with the dough.

Time to brand the pie...



Mini was served with a miniature cabbage, tomato and dried mint with a lemon-oil dressing.

In the spirit of Mini, I am going to keep tonight's article brief. So I am off to bed with Mini in my tummy.
