Meghli is an authentically Lebanese vegan, gluten free and delicious pudding.
It is typically made when a baby is born; and in turn is a popular dessert at Christmas and New Year. Most importantly it is very easy to make.
Mix well in a pot:
- 9 cups water
- 3 cups sugar
- 1 cup rice flour
- 1 Tbsp ground anise
- 1 Tbsp caraway powder
- 0.5 Tbsp cinnamon
Turn the heat on medium and bring to a boil, constantly stirring. When it boils (and by the way, Meghli means boiled in Arabic), let it continue to boil for 3 minutes while stirring. It is now ready to pour in serving plates and let cool.
You can eat Meghli as a pudding. But the traditional way of eating it is covered with coconut and a selection of nuts.
You sprinkle it with a thin layer of coconut. Then you top it with pre-soaked nuts: almonds, walnuts, pistachios and pine nuts. A sweet beautiful looking delicacy for sure.
