Mehshi Kousa Wa Batenjen (stuffed zucchini and eggplants) is a perfect winter meal (see Recipe HERE).
So whenever I find those nice Lebanese zucchinis and small eggplants, I am all for making mehshi; specially that, in winter, I have a nice natural fridge outside to keep my vegetables fresh.
Emptying the vegetables to prepare them for stuffing is a very stress releasing activity. And the stuffing does not go to waste (more on this later).
The stuffing is cooked on low heat with onions, garlic and olive oil - a perfect appetizer.
Yogurt also goes well with mehshi; but nothing beats just soaking it with the tomato sauce it cooks in and indulging.
