Lent Recipes from Lenten - Bean Casserole

A book received when baby Jesus was born is being heavily used now as Jesus days on earth are numbered.


It's a compilation of lent recipes by the Ukrainian Women Association of Canada - Saskatoon Branch and those recipes are tasty, healthy and real simple. Here's one to share.

Fry 2 sliced onions and 1 minced garlic clove.

Add 14 oz can of tomatoes and twice the amount cooked beans.

Sprinkle with 0.5 tsp dried herbs and pepper

Bring it to a simmer for few minutes

Then add either a 10 oz package of frozen spinach, or, as I did, leaves of 2 bunches of fresh spinach.

Cover and simmer for another 2 - 3 minutes, until spinach is welted.

Enjoy a fresh, healthy vegan meal.
