Jaffrey Again

Five days later I find myself cooking from The Madhur Jaffrey Cookbook again (Read Indian Kale).

The recipes are so simple, yet so tasty.

This one was simply a tofu and vegetables dish, with lots of flavour.

Soy, vegetable broth, ketchup, sugar and peppers are the base.

Garlic, ginger, hot chili peppers are fried, then simmered with the base.

This is thickened with cornstarch to soak fried tofu.

Onions, green and red peppers were fried.

All were mixed with the tofu and its sauce.

Served over noodles - sweet with a hot bite.

Loved it.
