Camping with Meat & Potatoes - Night 1

Not bad for a camping dinner served in paper plates and eaten with wooden disposable fork and knife.

In fact, it is quite impressive that the camp produced meatloaf, baked potatoes (served with yogurt), mushroom gravy and a kale side.

Here is how it happened...


A sommerville meatloaf (see recipe) was prepared and few potatoes wrapped in foil. All were thrown in the toaster oven.

But the impact of a small baking dish and/or the convection oven cooking resulted in a drier-than-I-like meatloaf. The baked potatoes, on the other hand, turned out excellent.


I should have given this small hot plate stove more credit. I was skeptical, but finding small pot and small frying pan that fit right on top of the heating plate made for a boiling mushroom gravy and a nicely cooked kale (your green for St. Patrick's Day).

The kale, though, had to cook in portions given the size of the frying pan.
 

And what is the best thing about camping? You can throw the paper plates and disposable wooden cutlery right into the fire when all done!
