Here's another find from Saskatchewan:
A Regina Symphony Women's Association cookbook with amazing unique recipes that I am trying out starting with Banana Cookies (yes, you read it right).
Three bowls:
1. Cream 0.67 cup butter, 1 cup sugar, then add 2 eggs and vanilla.
2. Mix 2 - 3 mashed bananas with 0.5 tsp baking soda and let sit.
3. Mix 2.25 cups flour, 2 tsp baking powder, 1 tsp of mixed cinnamon, mace and/or nutmeg.
Add bowl 3 ingredients alternately with with bowl 2 ingredients to bowl 1.
Mix well, then fold in 0.5 cups of pecans, walnuts, chocolate chips or raisins (I used chocolate chips - excellent combo).
Bake in 400 oven 12 - 15 minutes.
I say ignore the last line and bake for 8 - 10 minutes (or try them in 375 oven).
As you see, my first batch had a small accident. But the rest came out delicious - like eating a banana cake in a cookie.
