Quinoa Goreng

I found this recipe in a community paper as part of Garden to Table seniors healthy eating program.

According to the author, the original recipe included chicken and rice but she adjusted it to include kale, tofu and quinoa.

Here's the recipe.

Heat 2 Tbsp vegetable oil and saute for 2 minutes:
- 1 small onion diced
- 1 carrot diced
- 1 leak diced
- 2 minced garlic cloves

Add 1 cup shredded kale and 1 tsp ground coriander. Saute for another 3 minutes.

Add 3 cups cooked quinoa and 1 cup cubed firm tofu. Cook until all heated up.

Combine 0.5 Tbsp chili paste, 2 Tsp soy sauce, 2 Tsp honey (I tripled those for more oomph).

Add the mix and 1 sliced green onion and toss.

Garnish with a mixture of diced cucumbers and fresh cilantro.

Easy, healthy, tasty.

The next day, I topped the leftover with a fried egg - that was even more amazing.
